Mini Apple Sponges

These mini sponges are a delight for children and adults of all ages. They have the appeal of cakes, but are packed with fruit!

Ingredients:

  • 3 apples or fruit puree
  • 50 gm butter
  • 50 gm caster sugar
  • 50 gm flour
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla essence 

 

 

Method:

  1. Preheat oven to 180 degrees
  2. Grease muffin tray
  3. Peel and chop apples and stew in pot with a splash of water until soft
  4. Puree stewed apples
  5. In another bowl cream together butter and sugar, add remaining ingredients and beat together
  6. Put a tablespoon of hot fruit* into muffin tray and dob a teaspoon of sponge on top (NOTE, *Fruit must be hot)
  7. Cook for 10 mins or until sponge golden brown
I use a silicon muffin tray and then freeze the whole tray, when frozen I put them in freezer bags and take one out at a time! Add some icecream and enjoy! - Georgina
